- 2 cups Biscoff cookies, crushed
- 1/2 cup unsalted butter, melted
- 1 cup white chocolate chips
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup crushed Biscoff cookies (for topping)
Instructions
- Set the oven temperature to 350F (175°C). Using parchment paper, line an 8 × 8 inch baking dish, allowing an overhang for easy removal.
- In a medium bowl, combine the crushed Biscoff cookies and melted butter until well mixed. To produce the crust, press the mixture firmly into the baking dish that has been prepared.
- In a small pot over low heat, melt the white chocolate chips and sweetened condensed milk together, stirring regularly until smooth. Take off the heat and mix in the salt and vanilla essence.
- Pour the white chocolate mixture over the Biscoff crust, spreading it evenly with a spatula.
- Sprinkle the remaining crushed Biscoff cookies over the top.
- Put it in an oven that is already hot for 18 minutes, or until the edges turn a soft golden brown.
- Let the bars cool all the way in the baking dish before removing them using the parchment paper overhang.
