Description

Mini Pineapple Upside Down Cakes are delightful individual desserts that bring a tropical twist to the classic recipe. Each cake features a buttery vanilla base topped with caramelized pineapple rings and cherries, creating a perfect blend of sweetness and tang.

  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar
  • 1 can sliced pineapples (drained)
  • Maraschino cherries
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. In a saucepan, melt butter and mix with brown sugar until smooth. Pour into muffin cups.
  3. Place a pineapple slice in each cup and add a cherry on top.
  4. In a bowl, cream granulated sugar and egg until fluffy; then mix in milk and vanilla.

  6. Spoon batter over the pineapple layers, filling each cup.
